Tiramisu with tropical fruits

Tiramisú is a delicious dessert from the Italian kitchen. My wife, who is half Italian, always makes it in the traditional way with coffee and chocolate.

Still, it's a dessert that you can easily adjust to other flavors. For example, we already have one version with ponche crema (really recommended!) – but this version with fresh fruits is also delicious… and really different from the usual!



With this recipe you can make a large bowl of tiramisu, certainly enough for 6-8 servings.

INGREDIENTS:

  • 500 g mascarpone
  • 150 gr sugar
  • 6 eggs *
  • 500 ml pineapple juice
  • the grated zest of 1 lime
  • 50 gr grated coconut (+ extra to decorate)
  • 1 mango, in small cubes
  • 350 gr long fingers (biscuits)
  • a pinch of cinnamon and grated nutmeg
  • pineapple pieces, to decorate

* Do you find it scary to use raw eggs? Then use meringue powder in place of the egg whites and replace the yolks with 3 tbsp whipped cream.

PREPARATION OF TIRAMISÚ WITH TROPICAL FRUITS:

Be the first to whisk the proteins or make them the meringue powder according to the instructions for use.

Then mix the egg yolks, the sugar and the mascarpone into a soft cream.



Then add the cinnamon and a little nutmeg.

Carefully work the proteins through the cream and finally divide the mixture into two parts.

In one part put pieces of mango and in the other 50 gr grated coconut and the grated lime zest.

Now dip half of the cookies (one by one) in the pineapple juice and place them side by side in the dish to form a layer.



Then spread the first part of the mango mixture on it.

Dip the rest of the cookies in the pineapple juice to make a second layer.

Add the rest of the mixture with coconut and lime zest.

Decorate the tiramisú with extra pieces of pineapple or mango and sprinkle with grated coconut.
