Spring roll the way Curaçaos / Antillean lumpia

Well… how are we going to sell this again? The name and the original dish are absolutely Malay/Indonesian… the influences are definitely Chinese… and yet this spring roll is a real Antillean dish.

Antilleans who buy a Vietnamese or Indonesian spring roll in the Netherlands therefore always complain that it is different from 'at home'.



This is mainly because we do not use spring roll wrappers in the Antilles that you can buy ready-made. We prefer to make our own from an omelette that we then deep-fry in a batter. As a result, our spring roll is softer and the dough is slightly thicker and more present than with the Oriental variant.
