Rice salad with surimi

In this fifth part of our 'budget bites' we give a delicious recipe with a Caribbean taste, which should not cost more than €2,00 per person. This delicious rice salad with surimi is a complete meal with rice, vegetables and fish. It costs €1,60 per person and is also very easy to make! This recipe is for 4 people.


  • 2 cups long grain rice (eg Surinamese)
  • 2 carrots
  • 1 can of corn kernels (400 ml)
  • 200 gr peas (frozen)
  • 200 g surimi
  • 1 green pepper
  • 3 tablespoons of wine vinegar
  • 2 tablespoons brown sugar
  • 2 tablespoons olive oil
  • 1 tablespoon of sunflower oil
  • 1 / 2 teaspoon black pepper
  • 1 / 2 teaspoon of salt
  • 1 teaspoon of dark soy sauce


Wash the rice well and then cook it in 3 cups of water with a teaspoon of salt.

Let the rice cool and loosen the grains with a fork.

Cut the carrots into slices and the bell pepper and surimi into cubes.

Heat the sunflower oil in a pan and briefly fry the bell pepper, carrot and peas.

Add a few tablespoons of water and stew the vegetables until al dente.

Add the vegetables to the rice.

Also add the pieces of surimi and the corn kernels.

Make a dressing by mixing the olive oil, vinegar, sugar, salt, pepper and soy sauce.

Pour this dressing over the salad and mix well.

Serve the salad well chilled.
