It is a classic that is loved by many people for a reason: the pulled pork sandwich. In other words: a sandwich with delicious soft pulled pork from the pig. Cooked for hours, until it really falls apart. Few things are tastier than that!
For the best 'pulled pork', use a slightly fattier piece of pork. A shoulder or attorney for example. The long cooking at a lower temperature gives the fat time to completely melt away from the meat. This keeps the meat soft and juicy and you immediately get a delicious gravy. The longer the meat cooks, the more the fat gently melts away, until only the threads of the meat remain. Buttery soft and suitable to take apart without any effort. And that's what we make these delicious pulled pork sandwiches!
Pulled pork from the Attorney
For this recipe we use the pig's attorney. That's a fancy name for 'neck, boneless'. The attorney has a nice fat content (which later melts away and keeps the meat juicy) and weighs about 2 to 2,5 kilos. Because the meat of the prosecutor contains no skin, large nerves or bones, it can be processed into pulled pork immediately after baking. A child can do the laundry, so!
You won't find such a beautiful — and large — piece of meat in the supermarket, of course. It's best to go to a good butcher for that. They can certainly order it for you!
The sandwiches & toppings:
When making these pulled pork sandwiches, use the sandwiches you like best. In our case these were these brown dots, but a pistol or even ciabatta is also perfectly suitable.
In addition, you can of course vary endlessly with the toppings. Pickled red cabbage (see photo) is of course beautiful, just like lettuce and pickle. But also use what you like best for this.
Extra sauce is always allowed, but is not really necessary. Due to the large amount of spices that are stirred into the meat after baking and the moisture and fat that it releases, it already makes its own sauce in the oven.
This recipe is for about 10 rolls. Do you want only 2, 3, or 4? Then stick to the recipe (the attorney has a certain size), but after baking divide the meat over different containers and freeze a portion.
- Sandwiches of your choice
- 1 pig attorney
- 2 tbsp smoked paprika powder
- 2 tl cumin powder
- 1 tbsp coriander seeds, ground
- 1 tbsp onion powder
- 2 tsp garlic powder
- 2 tsp cayenne pepper (more or less to taste)
- 1 tbsp salt
- 2 tsp black pepper
- 1 tl ginger powder
- 2 tsp sugar
- 30 ml sunflower oil
And further (optional, to taste):
- ½ red cabbage, cut into strips and put in water with vinegar
- 1 winter carrot, julienned
- 3 pickles, sliced
- Lettuce leaves
- Mayonnaise or ketchup
- Sambal / pika
- Spring onion rings
Preparation pulled pork sandwiches
Start, of course, by preparing the meat. Since this takes about 5-6 hours in the oven, it is important to start on time. First, mix all the spices, salt, pepper and sugar from the first list together. You have now made a very nice 'dry rub'. With this you can completely 'bread' the prosecutor. There really is a good layer of spices on the meat. These go through the whole after baking.
When the meat is completely covered with the spices, preheat the oven to 200 degrees and place the meat in a large baking dish. Now put the meat in the oven and bake it for 30 minutes at 200 degrees. Then turn the temperature down to about 140 degrees. Let the meat cook for at least another 5 hours.
After 3 hours, pour the sunflower oil over the meat and cover with a layer of aluminum foil. Then let the time and heat do their job.
When the meat is completely cooked, remove it from the oven and use 2 forks to break it apart completely until you are left with only threads. Stir the herbs, fat and juice that is in the baking dish well through the meat, so that all pieces have the same taste.
Now make the sandwiches: cut the sandwiches in half and top them with some lettuce, the pulled pork, the pickled red cabbage, carrot and spring onion. Finish the sandwiches with some sauce or sambal. Again: this is entirely to taste. As long as the meat is well cooked, you'll be fine! - Enjoy your meal!
