papaya pudding

This delicious pudding can be eaten hot or cold. It goes very well with meat dishes warm – and cold it is of course a tasty dessert!

You can taste the Caribbean by mixing papaya, coconut and lemon. This recipe is for 4-6 people.


  • 1 large papaya
  • 1 coconut
  • the juice of 1 lemon
  • 4 tablespoons sugar
  • 3 eggs
  • 100ml whipped cream
  • a pinch of salt


Preheat the oven to 175 degrees.

Peel the papaya and cut it into pieces.

Put the pieces in a bowl and mash them with a fork. (this is of course also allowed in a food processor or blender)

Grate the coconut very finely.

Mix the papaya puree with the coconut, lemon juice, sugar, eggs and 100ml whipped cream.

Beat well with a spoon and add a pinch of salt.

Pour the mixture into a greased baking or pudding mold. (about 1 liter)

Bake the pudding for about 45 minutes, or until completely set.

Serve it warm with beef, pork or chicken… or let it cool and eat it for dessert.
