'Galiña hasá' or fried chicken is a real everyday dish. Whether or not you understand why… chicken is something of an obsession for Antilleans!
Rice with chicken, saté of chicken, chicken soup – we can really eat it almost every day. The absolute number 1 preparation of chicken is surely this delicious fried chicken. Fried, actually. We can't say it, but this recipe is very similar to that of 'the colonel'.
The secret of this recipe lies in two things: firstly, of course, the delicious spice mix… and secondly, the crunchy crust. That crust is made with a batter based on buttermilk and flour.
Ingredients:
- 12 chicken pieces (drumstick, thigh, wing, etc.)
- lemon juice or vinegar to wash the chicken
- 200 ml buttermilk
- 2 eggs
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 / 2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1 teaspoon of cayenne pepper
- 1/2 teaspoon of onion powder
- 1 / 2 teaspoon garlic powder
- 1 tablespoon / bag of baking soda
- 300 gr flour
- oil for frying
Preparation galiña hasa:
First wash the chicken pieces with lemon juice or vinegar and pat dry.
Then take a bowl and mix in the buttermilk, eggs, herbs, salt and pepper.
In another bowl, mix the baking powder with 100 grams of flour. Then add this to the other mixture and stir until a smooth batter is formed.
Then put the other 200 grams of flour in another bowl.
Then heat the oil in a deep fryer or wok. The oil should be about 175 degrees.
Roll the chicken pieces through the flour first, then through the buttermilk and finally through the flour again.
After that, drop the chicken pieces into the oil and fry until golden brown, about 10 minutes.
Finally, place the chicken pieces on kitchen paper to drain.
Serve them with your favorite dipping sauce… or eat them straight!
