Pan bolo / boyo – Bread pudding

Is there still old bread in the cupboard and is it actually not good anymore to eat like this? Do not throw away! Upgrade it by adding this delicious pan bolo (sometimes also written as boyo). Secretly as tasty as a real cake!

Do you prefer to bake a cake without bread? Then try our bolo di manteka!


  • 8 old (white) sandwiches
  • 2 tablespoons of melted butter
  • 4 eggs
  • 100 grams of raisins
  • 300ml. milk
  • 1 teaspoon of cinnamon
  • 100 grams of sugar
  • 1 packet of vanilla-flavored sugar
  • (optional: 1 apple, peeled and cut into small pieces.)

Preparation pan bolo:

Preheat an oven to 175 degrees.

Grease a baking tin with butter. Break (with your hands) the bread into small pieces.

Sprinkle the raisins (and possibly apple) over the bread pieces.

Sprinkle the whole with the melted butter.

In another bowl, mix the eggs with the milk, cinnamon, sugar and vanilla sugar. Stir well!

Pour this mixture over the bread pieces in the baking tin.

Let it set in the oven for about 45 minutes. If the pudding on the top becomes too brown, you can cover it with a sheet of aluminum foil.

Let the pudding cool. Serve it with whipped cream and (optional) caramel syrup
