Li di peanut (sometimes written as 'lie di peanut butter') is real Antillean ice cream. It is a cross between water ice and ice cream.
We make the ice creams in small cups. Traditionally, there is no stick in it, but I always put them in. Nice and easy to eat!
For years we have had a discussion about this recipe in our house. My (half Italian) wife thinks peanut-flavored ice cream is strange and therefore doesn't want to try it.
She always says: “In Italy we have 1000 flavors of ice cream, but peanut butter is not one of them – and that is probably for a reason”. But of course we Antilleans know better. Li di Peanut Butter is simply the tastiest taste.
- 500 ml of coffee milk
- 100 ml water
- 100 gr granulated sugar
- ½ tsp vanilla essence
- 100 gr peanut butter
Preparation of li di peanut
First boil the water with the sugar into syrup and let it cool completely. Then mix all ingredients well with the food processor.
Then pour the mixture into plastic cups.
Then cover the cups with aluminum foil and insert an ice cream stick in the middle. (The stick remains upright due to the foil).
Finally, put them in the freezer until they are frozen. - Enjoy your meal!
