Li di anasa (pineapple ice creams)

door Linda Terrizzi

Li are traditional Antillean ice creams. You make them by freezing a mixture of milk and fruit juice in a cup. So easy to make, but super tasty!

Make the most delicious pineapple ice creams yourself with this recipe. The Antillean ice creams are easy to make, are nice and creamy and do not require a special ice cream maker.

You make them in the same way as frozen lollipops: simply, in a mold in the freezer.

Recipe from our book

This recipe can also be found in our cookbook 'The complete Antillean kitchen'. Did you know that there are no less than 300 (!) recipes in that book from the kitchen of Aruba, Bonaire en Curaçao?

It is the result of 7 years of research and we now finally dare to say that we have really “captured” Antillean cuisine in its entirety. Click on the image below to learn more about the book:

Ingredients:

  • 1 can of pineapple slices (400 grams, incl. Syrup)
  • 500 ml of whole milk
  • 150 gr icing sugar
  • a few drops of almond essence

Preparation li di Anasa:

Put all ingredients in a blender and puree the whole. Note: Always use canned pineapple and NEVER use fresh pineapple. Raw pineapple makes the milk bitter!

Then pour the mixture through a sieve to remove pieces.

Now divide the mixture between 6-8 plastic cups.

Then seal the cups with a piece of aluminum foil and insert an ice cream stick in the middle. (The stick remains upright due to the foil)

Finally put the cups in the freezer for 24 hours. Enjoy your meal!
