Kesio / quesillo – South American flan

Kesio is a traditional dessert made in the Caribbean and South America. There is quite a bit to do to name this dish. The Spanish speakers call it Quesillo, in the Antilles it's Kesiyo, the Europeans prefer to say flan and the French would almost think it's a crème brulee.

Either way, this oven baked pudding is delicious and that's why it's eaten one way or another all over the world.



Ingredients

  • 6 eggs
  • 2 cans (2x 397 ml) condensed milk with sugar
  • 400 ml whole milk
  • dash of vanilla essence or a bag of vanilla sugar
  • 200 gr sugar
  • 50 ml Amaretto or rum
  • (optional) half candied cherries, for decoration

Preparation of the kesio:

Heat the sugar in a dry pan until the sugar melts. Pay close attention here… the sugar may melt and turn brown (almost amber in color), but of course not black. When the sugar starts to melt, you can stir the pan with a spatula to make the process more even.

Pour the melted sugar into a baking pan and tilt it to cover the bottom and a little bit of the edges.

Then beat the eggs in a large bowl and add the condensed milk, whole milk and whiskey or rum. Then add a dash of vanilla essence. Pour this mixture on top of the burnt sugar in your baking pan.

Meanwhile preheat the oven to 180 degrees. Then cover the baking tin with aluminum foil and place it in a larger baking tin or dish. Now fill the larger bowl with water, so that the kesio will be cooked in a bain-marie.



Bake the kesio in this way for about an hour at 180 degrees. After an hour you can gently feel whether the pudding has set completely. To do this, press in the center of the kesio. Once it has set, it will bounce back slightly when you press it – if not, it may bake a little longer.

Finally, let the kesio cool down and cut it into pieces. Pour a little of the remaining caramel over each piece and finish the pieces with half a candied cherry. - Enjoy your meal!
