This green tomato chutney is delicious on your hot dog sandwich… at the barbecue and even over rice. The sour taste of the green tomatoes makes the chutney nice and fresh, while the spices add flavor.
This recipe makes a big pot of chutney, certainly enough for a number of meals. You can pour it into sterilized jars while it's still hot. That way you can keep it for a very long time. Of course you can also 'just' put it in a jar or container in the fridge. In that case you keep it good for about 7 days. (chilled)
- 1 liter of finely chopped green tomatoes
- 2 onions, chopped
- 1 green pepper, cubed
- 1 red pepper, diced
- 2 tablespoons of salt
- 1 / 2 teaspoon cumin powder
- 1 / 2 teaspoon black pepper
- 1 tablespoon of dried dill
- 150 gr sugar
- 1 tablespoon of mustard
- 1 stalk celery, finely chopped
- 4 cloves
- 200 ml vinegar (distilled or wine vinegar)
PREPARATION GREEN TOMATOES CHUTNEY:
Chop the tomatoes and chop the onions.
Then cut the peppers and celery into cubes
Mix the vegetables in a large bowl and sprinkle the salt on top.
Stir well and let it stand for at least an hour.
The salt will draw some of the water out of the vegetables. Drain this using a sieve.
After draining, put the vegetables, together with the other ingredients, in a pan.
Heat it all while stirring well.
When the mixture is boiling, turn the heat down very low.
Let the chutney simmer for about 20 minutes and then turn off the heat.
You can pour the chutney into sterilized glass jars and keep it there for a very long time.
If the jar has been open, you can keep the chutney in the fridge for at least another week.
