Salada di Macaroni (sometimes written as salada di makaroni) is a dish you can eat Curaçao encounter a lot. You make it with a base of elbow macaroni, vegetables and a sauce with mayonnaise, yoghurt and piccalilli.
In the Antilles, this salad is often served alongside a main course. For example, it goes very well with meat or fish from the barbecue. Usually you also get a large portion of rice on your plate. If you are not careful you eat a lot of carbohydrates with such a meal (rice + pasta)
This is because we sometimes forget that such a pasta or potato-based salad is not just a 'salad'. In the Netherlands we would call it a meal salad, because the pasta is already in it.
We always eat our salada di macaroni a bit healthier than usual. So with a lot of vegetables and a sauce that is less fat. This way we can also enjoy it on a weekday. We also use whole wheat macaroni in this recipe. Don't have to, can. Just what you like best of course.
Meat, fish or vegetarian?
In our basic recipe for salada di macaroni I deliberately did not mention a source of protein. You can choose these yourself. Most people opt for ham cubes in this dish, but pieces of tuna, surimi or salmon also do well in it. Another idea is to add cubes of (smoked) chicken breast. And for a vegetarian version, you can make it with cubes of cheese.
Because of the neutral basis, every type of protein is a suitable partner. And if you already eat something else next to it (eg a piece of meat, fish or a meat substitute), you can also make it without it.
This recipe is for 6 people.
- 500 gr (whole wheat) macaroni
- 1 cucumber
- 5 tomatoes
- 1 red onion
- 1 red peppers
- 1 celery stalk
- 300 gr corn kernels (canned)
- 1/2 head of iceberg lettuce
- chopped parsley, for garnish
For the dressing:
- 3 tbsp chips sauce
- 3 tbsp Greek Yogurt
- 1 tbsp piccalilli
- 1 tbsp olive oil
- 2 tsp stock powder or 1 crumbled stock cube (chicken)
- 1 tl paprika
- the juice and the grated zest of 1 lime
- salt and pepper to taste
Preparation of the salada di macaroni
Cook the macaroni according to the instructions on the package. Then drain the macaroni under running cold water until it cools down to room temperature. Then drain it in a sieve or colander.
Cut the cucumber, bell pepper, tomatoes, celery and onion into small cubes. Mix the vegetable cubes in a large bowl. Then also add the corn kernels.
Cut the half head of iceberg lettuce into gossamer strings. Add the lettuce to the rest of the vegetables and add parsley to taste.
Now make the dressing. You do this by mixing all the ingredients under the heading 'dressing'. Then pour the dressing over the vegetables.
Do you want cheese, meat or fish in the salad? Then now is the time to add it! Stir your favorite protein source into the vegetables.
Finally add the macaroni and stir the salada di macaroni well, until all the elbows are covered with some of the dressing. Taste the salad and add more salt and pepper to taste.
Tip: Do you like spicy? Then a half finely chopped Madame Jeanette pepper is also delicious to add!
Serve the salad cold and possibly next to a main course of your choice. Enjoy your meal!
