Chocolate & peanut cake

Sometimes the simplest recipes are actually the tastiest. This chocolate and peanut cake is one of them. You make it pretty much the same way as ours 'bolo di manteka'. What makes this cake so delicious is the addition of real chocolate (not just cocoa powder) and a layer of chopped peanuts on top.

The combination of chocolate and peanut makes this cake a bit reminiscent of a Snickers bar. To really complete that picture, you can add some salted caramel sauce about pouring. Don't tell anyone I gave you that tip, huh? ;)



INGREDIENTS:

  • 300 gr wheat flour
  • 250 gr granulated sugar
  • 100 gr cocoa powder
  • 250 gr butter, at room temperature
  • 1 bag / 16 gr baking powder
  • 1 pinch of salt
  • 5 eggs
  • 3 tbsp whole milk
  • 75 gr dark chocolate, in pieces
  • 100 gr peanuts

PREPARATION CHOCOLATE & PEANUT CAKE

Preheat the oven to 170 degrees and grease a cake tin (22-24 cm) with butter. Then take a large bowl and mix the sugar in it with the butter until fluffy. Then add the 3 tablespoons of milk.

Then stir in the eggs. Add one egg at a time, until well incorporated.

Then mix in the wheat flour, the cocoa powder, the baking powder and the salt. Stir into a thick, smooth batter. With this kind of batter it is important not to mix the whole thing too much, otherwise you risk the cake collapsing!

Finally, add the chopped chocolate pieces and then pour the batter into the greased cake tin.



Finally, sprinkle the top of the batter with the chopped peanuts.

Put the cake in the oven and let it cook in 40-50 minutes. The cake is cooked when one satéskewer comes out clean.
