Caribbean mini pizzas

You can make these delicious mini pizzas with jerk chicken strips, cheese and a special tomato and ricotta sauce. It's that 'pink sauce' that makes it special! The pizzas are baked in no time, because we use the pizza dough from Danerolles. And that makes them super suitable for a cozy picnic!

The sun is shining, the sky is blue… ok, you know how this goes. But what I really want to say is that the weather is of course perfect for a nice picnic! And that weather is often a problematic factor. Because you never know far in advance whether it is suitable to go outside. And of course you want to arrive with tasty, homemade snacks and dishes that in turn require some planning. That makes organizing a picnic not easy.

For days like this I'm glad there are products that make life a little easier. Like the ready-made pizza dough from danerolles. Because you prefer to make a real pizza yourself, but that dough… it has to rise for a few hours! And normally (say: for a pizza night) I like to make it myself, but when I want to have a picnic in the afternoon, I can't make the dough 'from scratch'. I want to, but the time isn't right.

Danerolles pizza dough

You probably know Danerolles from 'the croissant on Sunday morning'. With us in Sliedrecht, the shops are still closed on Sundays (yes, also the supermarket and the bakery) and it is therefore impossible to buy a croissant on Sunday morning. Making my own is really above my cap and buying a day earlier is just… not so good.

Then the cans of croissant dough from Danerolles offer a solution. You take the dough out of the tin, roll it up and bake it. It doesn't even take time to rise! (this still feels a bit like magic to me – how can it regain its shape so quickly after rolling?)

But did you know that Danerolles has 6 other products besides croissant dough? One of which is this pizza dough. With one can of pizza dough you can bake 8 small mini pizzas. Unfortunately, the pizza dough is not available in every supermarket, but don't worry: the cans with 'petits pain dough' are actually just as good for this recipe. With only one small difference: the cans of petits pains dough contain enough dough for 6 pieces. If you need 6, they are perfect. And if you want more mini pizzas, you can of course take two cans.

The recipe for the mini pizzas

For this pizza recipe we make our own sauce from tomato puree and ricotta. The sauce is also made within a minute or so, because we don't cook it.

We also top the mini pizzas with Jamaican 'jerk chicken'. Because we go for fast, I use chicken fillet strips in this case. They are so cooked and you can season them on all sides, so that they get a lot of flavor.

You can of course also use your favorite meat substitute instead of the chicken. Strips of seitan or 'chicken pieces' are my favorite.

Ingredients:

  • 1 can (70 g) tomato paste
  • 100 gr ricotta cheese
  • ½ tsp dried oregano
  • Salt and pepper to taste
  • 1 can Danerolles pizza dough of petits pain dough
  • 100 g grated mozzarella
  • 100 gr grated cheese (mature)
  • 150 gr chicken fillet, cut into strips
  • 2 tbsp sunflower oil, for frying

To season the chicken:

  • ½ tsp garlic powder
  • 2 cm ginger, grated
  • ½ tsp thyme (dried)
  • A pinch of cinnamon
  • Salt and pepper to taste
  • A pinch of grated nutmeg
  • 1 tsp brown sugar
  • Optional: a piece of hot (Madame Jeanette) pepper

Preparation Caribbean mini pizzas

Start by baking the chicken breast. Cut the chicken into strips and season them with the spices from the last list. Heat the sunflower oil in a frying pan and fry the chicken strips in it for a few minutes, until they color and are almost cooked. Set the chicken pieces aside.

Meanwhile, preheat the oven to 180 degrees and line a baking tray with baking paper.

Now continue making the sauce for the mini pizzas. To do this, mix the tomato puree with the ricotta (cold) and add the oregano, salt and pepper to taste.

Remove the pizza dough from the package and roll out each ball of dough to a circle about 15 centimeters in diameter. Add a tablespoon of the sauce and top with the chicken.

Sprinkle the mini pizzas with some of the grated mozzarella and the grated cheese. Continue until all pizzas are topped. Then place them on the baking tray and bake them for about 15 minutes until golden and golden. Enjoy your meal!
