Bolo di borracho – Drunkenman's tail

As with many Antillean cakes, this 'bolo di borracho' a fair amount of booze. For that reason, the cake has a long shelf life, even outside the refrigerator. This drunken man's tail is originally Arubayears.

INGREDIENTS:

    • 1 bolo di manteka
    • 100 ml rum (preferably white)
    • 500 ml cream
    • 1 tablespoon of powdered sugar
    • 500 ml milk
    • 35 gr sugar
    • 35 g custard powder
    • optional: colored candies and / or cherries as decoration

Preparation bolo Tue Borracho:

Create one first bolo di manteka and let it cool well. Cut it in three layers.



Make a pudding for the pie filling as follows:

Put the 500ml of milk in a pan, but keep 2 tablespoons of milk in a cup. Bring the milk to the boil with 35 grams of sugar.

Stir 35 grams of custard powder into the remaining 2 tablespoons of milk and add this to the rest of the milk.
Stir well until the pudding boils and thickens. Let the pudding cool with a layer of plastic wrap on the top (this way no skin will get on the pudding)

Take one of the three layers of cake and sprinkle it with half of the rum until it feels moist. Put half of the pudding on the cake and spread it with a spatula.



Repeat with the second layer of cake. (sprinkle with rum and spread pudding over it) Place the last layer of cake on top of the pudding.

Beat the whipped cream stiffly with a spoonful of powdered sugar and spread half of this on the top and sides of the cake. Put the rest of the cream in a piping bag and decorate the cake with it.

Optional: make the cake extra festive with candies and candied cherries.
