De bolo di anasa is a traditional Antillean cake. You may know this cake by another name, namely the pineapple upside down cake. And that's exactly what it is! A pineapple pie that is baked upside down.

This tasty cake is surprisingly easy to make. The best part is that he makes the beautiful layout almost automatically, because the cake is baked 'upside down' and when you take it out of the tin, it is already ready and beautiful enough to serve.

Bolo di anasa or pineapple upside down cake?

As I wrote above, some people also refer to this cake as 'pineapple upside down cake'. That's what it's called in the United States. The Bolo di anasa is therefore not only made in the Antilles, but also in the US, Suriname and Brazil.

It is therefore a delicious, tropical and especially easy cake to make. And he always looks very festive!


Use this recipe to make a cake about 24 cm in diameter.


  • 100 gr butter
  • 100 g sugar
  • 1 can (425 gr) pineapple slices
  • 10 candied cherries, halved

For the cake:

  • 4 eggs
  • 350 gr self-raising flour
  • 1 teaspoon baking powder
  • 1 / 4 teaspoon of salt
  • 300 g sugar
  • 300 gr butter, at room temperature
  • 1 teaspoon of almond essence

Preparation of the bolo di anasa:

Preheat the oven to 170 degrees. 

Now melt 100 grams of butter over low heat in a pan. Then pour the melted butter over the bottom of a baking tin (24-26CM). Then sprinkle 100 grams of sugar over it.  

Then divide the pineapple slices over the sugar layer and place the cherries halves (upside down) in the middle of the slices. Then take a large bowl and beat 300 grams of butter with 300 grams of sugar until fluffy.

 Now add the eggs and almond essence and continue beating until the mixture has almost doubled in volume. Now add the self-raising flour, salt and baking powder to this mixture.

 Then mix well to get a uniform batter. Then carefully pour the batter over the pineapple slices and place in the preheated oven.

Then let the cake bake for 45-50 minutes (or until a satéskewer comes out clean). Let the cake cool for 10 minutes and cut the edges with a blunt knife. turn the bolo di anasa finally and remove the baking pan. - Enjoy your meal!
