Bacalaitos are a delicious Caribbean snack with salted fish. These little pancakes have their origin in Puerto Rico, but they have also been known in the Antilles for a long time.
You can eat the bacalaitos as is, or serve them alongside a dish. This recipe makes about 20-25 pieces.
- 500gr. bakkeljauw
- 100gr. flower
- 1/2 teaspoon of baking powder
- a pinch of salt
- 1 clove of garlic, pressed
- 2 sprigs of coriander, chopped
- 100ml. water
- 1 / 2 teaspoon black pepper
- oil for baking
Soak the cod for at least 6 hours (preferably overnight) in cold water. Discard the water.
Boil the fish in new water for a few minutes. Discard this water too.
Take a bowl and mix the flour, baking powder, salt, garlic, coriander and pepper in it. Add the water and mix well.
Make small pieces of the cod and make sure all the bones are out. Also add the pieces of fish to the mixture.
Heat a layer of oil in a frying pan. Take one tablespoon of the mixture each time and fry for about 5 minutes on each side, until the bacalaitos are golden.
Drain the bacalaitos on kitchen paper. Enjoy your meal!
