Arepa di arros – rice pancakes

Do you have rice left over today? Do not throw away! Tomorrow you will make these delicious 'arepa di arros' (Antillean rice pancakes). It's a nutritious breakfast, and such a good way to use up leftovers.

This recipe makes about 10-15 pancakes.



INGREDIENTS:

  • 2 cups of cooked rice
  • 4 eggs
  • a cap of vanilla essence
  • 1 teaspoon baking powder
  • a pinch of salt
  • 2 tablespoons of oil
  • 50 gr sugar
  • 100 ml milk
  • 100 gr flour
  • oil or butter for baking

PREPARATION AREA DI ARROS:

Be the first to put all ingredients in a blender or food processor.

Then grind the ingredients until a thick batter forms.

Now heat the oil or butter in a frying pan.

Then fry two tablespoons of the batter to small pancakes.



This is best done by pouring the batter into the pan and then waiting for large bubbles to form.

When the bubbles form, turn the pancake over and fry the other side (also) golden brown.

Finally, serve the arepa di arros with sugar, syrup or a knob of butter.

Tip: It is best to store leftover rice outside the refrigerator. The rice hardens because of low temperatures. If the rice is still cold when making the pancakes, put it in the microwave for 30 seconds before continuing with the recipe.
