Antillean (ham) bitterballen

door Linda Terrizzi

The Antillean kitchen is famous for its snacks and snacks. This is another classic: Antillean bitterballen! These should of course not be missing at a real Antillean party. In contrast to the Dutch bitterballen, the Antillean version is made with ham, vegetables and they are nicely spiced. The end result is therefore slightly firmer (and bigger!) than the balls you find in the snack bar.

Ingredients of the bitterballen

In addition to ham and various vegetables, these Antillean bitterballen get their taste from the herbs. Paprika is really a 'must'! When the batter of the bitterballen is ready, it is best to put it in the freezer for a few hours. This makes the batter extra firm and it is easy to roll afterwards.

Then the balls can be rolled in the flour, egg and breadcrumbs to get their beautiful, golden layer. There are many variations of these bitterballen. You can actually make a small (bitterbal) version of any type of Antillean croquette.
