Antillean croquettes

door Linda Terrizzi

These Antillean croquettes are made with minced meat, vegetables and a lot of hot pepper. They are firmer than Dutch croquettes and are usually rolled out a bit thinner.

Antillean croquette recipe

The recipe for this classic Antillean snack can be found in our cookbook 'The complete Antillean kitchen' – of course in the snacks section. Did you know that there are no less than 300 (!) recipes in that book from the kitchen of Aruba, Bonaire en Curaçao?

It is the result of 7 years of research and we now finally dare to say that we have really “captured” Antillean cuisine in its entirety. Click on the image below to learn more about the book:

Which recipes are online?

Do you regret that the recipe for the croquettes is only in our book and do you already want to get started with a tasty, Antillean snack? These recipes are on the site & can therefore be made immediately:

In addition to minced meat as a main ingredient, this recipe has other seasonings. For example, various vegetables and herbs go through the mixture and it is bound with flour. We also make the crust ourselves. For this we use a portion of breadcrumbs.

Hot pepper

In the recipe we also use hot pepper (Madame Jeanette pepper). This can of course be added to taste. If you really like spicy, add the whole pepper. Do you prefer to eat a little milder? Then use half a pepper, or omit it entirely.

Tip: most of the heat is in the seeds of the pepper. You can therefore also choose to remove the seeds and only use the colored part of the pepper.

Freeze Antillean croquettes

The croquettes are easy to prepare and freeze in advance. This way you always have some goodies in the freezer that you can warm up in a few minutes. The low temperature in the freezer makes the croquettes nice and firm and you also have less chance of breakage. A real win-win situation!
