Preparation of salmon rolls:

First take a large bowl and mix the eggs, flour, half of the milk, olive oil, pepper and salt in it. If you then have a thick batter, add the rest of the milk and beat everything lightly with a whisk.

Then heat a frying pan on high and add half a tablespoon of oil. Now fry a tablespoon of the batter into a thin pancake in a few minutes and continue until the batter is finished.

Then place a piece of plastic foil of about 50 cm on the counter. Then always put two pancakes on top. Overlap the pancakes for 1/3.

Then spread a layer of crème fraiche over the pancakes and sprinkle with some chives, salt and pepper. Then put a layer of smoked salmon on top.

Roll the pancakes (together with the plastic foil) tightly and let this roll set for a few hours in the refrigerator.

Just before serving you can remove the salmon rolls from the plastic and cut them into 3 cm pieces.

Tip: For an extra easy variant, use pancake wraps from the store instead!
