Sweet potato fritters

You should really taste these sweet potato fritters! They combine the sweet taste of the sweet potatoes with tasty spicy spices such as curry, bell pepper and chili pepper. They are easy to make and you quickly have a whole bowl of them. Ideal if you want to serve a snack that is different than usual.

A while ago, we received a number of different types of potatoes from potato shop.nl. And that order included not only 'normal' potatoes (in our case a large bag of Nicola's and a bag of Roseval potatoes) but also a bag of sweet potatoes.

In the Antilles we call it 'batata dushi' and we mainly use them cooked in soups and stews. So I thought it would be fun to do something different with it… and that's how the idea for these 'sweet potato fritters' arose.

Potatoshop.nl

Potatoshop.nl is indeed an invention, you can just order all kinds of potatoes from your couch (but also onions, sweet potatoes and even some nice gadgets) and they will come to your home a few days later. That saves a lot of lugging!

You can search for the potatoes you need by variety or by the dish you want to make with them. For example, you can choose potatoes for stew or fries - and the boys at the potato shop have made a collection for you with the varieties that are best suited for this.

The potatoes come straight from the farmer to your home. Dirk Jan van Lonkhuyzen (“the son of…”) got the idea to offer the potatoes that his parents grew directly to the customer, via a webshop. A great fun initiative - and to be honest: in this weird time when you have to stay inside as much as possible, welcome too!

Finally (and of course we like that again!) There are also quite a few tasty potato recipes on the website. Of course different stews, but also salads, latkes and even the classic 'pommes Duchesse'. If you didn't have enough inspiration yet;)

So we started working with the sweet potato and you can read the result here. Do you prefer to watch a video instead of reading the recipe? That is allowed! In the video below, Linda explains in four minutes how to make the sweet potato fritters.

You can make about 30 fritters from this recipe.

Ingredients:

  • 1 KG sweet potatoes
  • 1 tbsp salt
  • 200 gr wheat flour
  • 1 tbsp curry (massala)
  • 1 tbsp paprika
  • 2 tsp chili pepper
  • Oil, for frying

Sweet potato fritters

Take a pan and heat a liter of water with the tablespoon of salt. Peel the sweet potatoes and cut them into wedges. Then boil the sweet potato pieces in about 15 minutes.

Now drain the water and return the potatoes to the pan. Then mash them.

Now add the flour, curry, paprika and chili powder and stir to a firm dough. Add salt and pepper to taste, if desired.

Now heat a pan with oil to about 160 degrees. Here we will fry the sweet potato fritters.

Take two spoons and form balls of the potato mixture. Slide the balls one by one in the hot oil and fry the fritters in about 5 minutes until golden and cooked. You can fry about 5 to 10 at a time, depending on the size of your pan and the amount of oil.

Finally, drain the fritters on kitchen paper and serve them while they are still warm. Enjoy your meal!
