Zjozjoli (Antillean sweets from Sesame)

One of the traditional Antillean 'boka dushi' (sweets) is Zjozjoli. This hard candy is made from sesame seeds, sugar, honey and spices.

Much of our traditional candy is a combination of nuts and sugar. Natural seasonings are usually added to this. You can think of ginger, lemon or cinnamon.



Ingredients:

  • 300 gr sesame seeds
  • 50 ml of honey
  • 100 g brown sugar
  • 100 gr granulated sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger powder
  • butter, to grease the baking tin

Preparation Zjozjoli:

Grease a baking tin of about 20x20cm with butter and set it aside.

Now put the sesame seeds in a dry pan and heat over low heat.

Keep stirring constantly while the sesame seeds get a light brown color. This will take about 5 minutes. By roasting the sesame seeds in this way, the zjozjoli will have much more flavor!

Then remove the sesame seeds from the pan and let them cool down a little while you make the sugar mixture.



To do this, mix the honey, the brown sugar, the sugar in a pan. Also add the cinnamon and ginger powder.

Now heat the pan over medium heat, stirring constantly. After about 3 minutes the sugar will melt and you will be left with a clear, smooth mass.

Now remove the pan from the heat and stir the sesame seeds into the sugar mixture. Stir the sesame very well into the sugar, so that each seed is covered.

Now pour the mixture into the greased baking tin. To get a nice, smooth layer you can use the back of a spoon to press the zjozjoli well.



Let the zjozjoli cool for about 15 minutes, or until the candy has set. Note: it should not cool completely! You can carefully take it out of the baking tin by going around the edges with a knife.

Finally cut the zjozjoli into pieces of 5x5cm. Now let the candy cool completely and dry slightly (in the air) before storing it.

However, never put them on top of each other: they will stick!
