Webu yená – Stuffed eggs the Antillean way

In the kitchen of almost every country you will find a form of stuffed eggs. This is also the case in Antillean cuisine. We call them webu yená and we make them nice and fresh and spicy with cayenne pepper and mustard. Webu yená are a quick and simple addition to any party buffet.

It is best if you pipe the filling back into the eggs with a piping bag. This way the result is neat and you run less risk of spilling. If you don't have a piping bag, you can of course also 'just' use two teaspoons to place the filling in the eggs.

Save Webu yená

You can make these deviled eggs up to two days in advance. Always keep them in the fridge. Unfortunately, freezing is not an option for this dish. When you make the webu yená, it is best to store them in a closed box in the refrigerator. This will prevent the egg yolk from drying out.

Another option is to store the empty (half) egg whites together in a box in the refrigerator and leave the prepared egg yolk in the piping bag until you are going to serve the deviled eggs. When the time comes, you only have to take the egg whites and the piping bag out of the fridge and you can use up the webu yená quickly.


  • 12 eggs
  • 4 tablespoons mayonnaise
  • 1 tablespoon of (French) mustard
  • 1/2 teaspoon of cayenne pepper
  • 1 / 2 teaspoon paprika powder
  • 1 tablespoon piccalilli (only the sauce)
  • salt and pepper to taste
  • optional: strips of spring onion or bell pepper, to decorate

Preparation of webu yená:

First boil the eggs in 10 minutes until the yellow is hard. Then cut the eggs in half and scoop the yolks into a bowl.

Then add the remaining ingredients to the egg yolk and mash everything with a fork until it is a smooth mass. Now put the mass in a piping bag and fill the egg whites with it.

Finally, as a garnish, you can sprinkle some extra cayenne pepper over the webu yená or decorate them with pieces of paprika or chives. Enjoy your meal!
