Vegan “pulled pork” (vegan recipe)

Our vegan pulled pork is made from… jackfruit! Another way to make your own meat substitute.

This "pulled pork" also works well as a vegetarian version of a pastechi galiña or - at Christmas - in one ayaka.



Why the name?

Of course, the name "vegan pulled pork" is not quite right. After all, no pork (pork) is involved in this recipe – not even a pig that has eaten plant-based all its life. Yet we opt for this name and not for “pulled jackfruit”. The reason is simple: the latter does not sound good to anyone, does it?

If we want to seduce someone with this recipe, we must still refer to something that is already known (and delicious!): Pulled pork. And while a true vegan or vegetarian might hate the idea of ​​pork, we thought it would be a good way to give this meat substitute a bit more exposure.

You make this recipe enough meat substitute for 4 people.

INGREDIENTS:

  • 2 cans (2x500ml) of young green jackfruit in salt water
  • 1 onion
  • 1 clove garlic
  • 2 tsp salt
  • 1 tbsp sugar
  • 1 tsp pepper
  • 2 tl paprika
  • 2 tsp ground cumin
  • 1 can of tomato paste
  • 2 el vinegar
  • 2 tbsp olive oil
  • 100 ml water
  • a pinch of ground cloves
  • 1 tsp liquid smoke

COOKING VEGAN PULLED PORK

Open the cans of jackfruit and pour out the water. Wash the jackfruit pieces under running water and drain.

Squeeze the jackfruit and remove any seeds. You are already getting a bit of the 'pulled' structure. Chop the onion and squeeze the garlic.

Heat 1 tbsp olive oil in a frying pan and fry the onion and garlic for about 3 minutes. Now add the jackfruit and fry on low heat for about 5 minutes.



Now add the salt, pepper, paprika and ground cumin and stir until everything is covered with the spices.

Now add the contents of the tomato paste can together with 2 tbsp vinegar, 1 tbsp sugar, a pinch of cloves and the liquid smoke to the jackfruit.

Add 100 ml of water and cook until the water has almost evaporated. Preheat the oven to 180 degrees and grease a baking dish with 1 tbsp olive oil. Bake the jackfruit for another 20 minutes, until it is dry and slightly darker in color.

You can eat this 'vegan pulled pork' on a sandwich… for example with some cucumber on sour!
