Tutu – Antillean side dish of cornmeal and beans

Antillean 'tutu' is a phenomenon! It is a side dish made from cornmeal, much like funchi or polenta. But tutu is a bit more elaborate and also has a lot more taste. It's a bit sweet and contains kidney beans, salt meat and lots of spices.

It's delicious with stews, like this one karni stobá (stewed beef the Antillean way) or this pulled pork with coconut and peanut.



The easiest way

The easiest way to make tutu is probably also the way the dish originated. Namely by first making a pan with tasty red bean soup (boonchi korá) and dilute the remainder with cornmeal.

This creates a slurry that becomes firm after cooling and can be cut into slices – the tutu. You eat these slices with your dinner, instead of potatoes or rice.

Opinions are strongly divided about Tutu. About 50% of people think the “real recipe” should be made with black-eyed beans… the other 50% swear it must be red kidney beans. As far as we're concerned, both are possible. In our recipe we use kidney beans. These give the tutu a nice, dark color.

Antillean tutu is a side dish that is well seasoned with spices. Usually Non-Antilleans have to get used to the fact that tutu is also a bit sweet. But once they learn to eat it, they don't want anything else.

Salt meat and coconut milk in the Antillean tutu

In addition to corn flour and beans, you also use a good amount of coconut milk and for this recipe salt meat. This makes the dish a meal in itself. However, we usually eat it as a side dish. With a tasty one stobá, for example.
