Antillean sùlt

door Linda Terrizzi

Antillean sùlt is a dish for which the following applies: “You either love it, or you hate it!” – the idea of eating pig ears will scare many people, while others can't think of anything more delicious.

Traditionally, people eat in the Antilles in December, around the holidays. It is usually eaten as a snack, possibly with a piece of bread. It is a dish that is both on Aruba, Bonaire as a Curaçao prevents.

Experts say that the best of sùlt is in the cartilage: When this is easy to bite, but still crispy, you have prepared it perfectly. In addition, the taste is of course of great importance. In our recipe we use different vegetables, herbs and spices to flavor the dish.

Where can I buy it?

You can find salted pig ears at butcher shops in the big cities, but also at Surinamese or Chinese tokos. Usually you have to ask for it, because it is not a product that butchers 'just' put in the display case.
