stobá from okra (100% vegan)

You don't always have to make soup with okras. Although our traditional jambo Once again, okras are also delicious when cooked in combination with other vegetables. Like in this hearty stew for example!

This stobá (stew) is also completely vegan. Good for a (conscious) day without meat.



Due to the large amount of beans in the dish, you get more than enough protein even without meat or other animal products. With a bowl of rice or a tasty one piece of funchi make it a complete meal.

Bonus points: the dish is easy to make and good for your budget!

This dish is for 4 people.

INGREDIENTS:

  • 2 tbsp olive oil
  • 50 gr wheat flour
  • 1 onion, chopped
  • a green pepper, cubed
  • 1 celery stalk, cut into pieces
  • 3 cloves of garlic, pressed
  • 200 gr okra, in rings
  • 400 gr (1 can) diced tomatoes
  • 500 ml vegetable stock (may from a cube)
  • 200 gr mushrooms, cut in pieces
  • 2 bay leaves
  • 200 gr boiled kidney beans (canned)
  • 200 gr cooked green lentils (can from a can)
  • 2 tsp dark soy sauce / sweet soy sauce
  • salt and pepper to taste
  • optional: chopped parsley and 1/2 Madame Jeanette pepper, for extra spice

stoba of okra antillean okra soup jambo recipePREPARATION STOBÁ FROM OKRA:

Take a good sized pan and heat it over medium heat. Now add the oil and the flour and stir until the flour has dissolved and starts to color.



Then add the chopped onion and turn the heat to low. Fry the onion until it looks translucent. Then add the pieces of bell pepper, celery, garlic and okra rings to the pan and stir well.

Then fry these ingredients gently for about 10 minutes. Then add the tomato cubes, the stock and the mushrooms. Stir everything well again.

Finally add the bay leaves, the soy sauce and possibly the Madame Jeanette pepper + extra salt and pepper.

Let it simmer for about 20 minutes and then add the beans and lentils. Let the stobá cook for about 10 more minutes.



Finally sprinkle freshly chopped parsley over the dish. Serve the stobá with rice or funchi.
