Sopi mondongo – Antillean soup

Sopi di mondongo is another dish with an acquired taste. Some people are horrified at the idea or smell – but the vast majority in the Antilles love it. The soup is also a really festive dish.

The characteristic smell of the soup can be counteracted by cleaning the ingredients properly. When they are then boiled in the soup, the unpleasantness disappears and you are left with a delicious result.



Special occasions

It is often eaten when the biggest milestone in building a house is reached: putting in the roof! The soup is also sometimes served on a Sunday, when friends or family come to visit. Preferably while enjoying a good game of Domino, which can be called the national sport of the Antilles.

Clean well

The secret of a good sopi di mondongo lies in the (very!) good cleaning of the ingredients. The beef tripe must first be boiled several times in water with some salt and vinegar before use. This eliminates the characteristic odor that some people consider unpleasant. After boiling, the ingredients can be cut into pieces for use in the soup.

Because the cleaning process takes quite some time, it is best to do this the day before.

Ingredients for sopi mondongo

In addition to the beef tripe, this soup also includes carrot, bell pepper and quite a few herbs. You can also add some quick-cooking vegetables at the last minute to taste. Think of peas, leeks or spring onions. That immediately adds some color to your plate!



Recipe for sopi di mondongo

In addition to beef tripe, this traditional soup also contains paprika, garlic and quite a few fresh herbs. You eat the soup with a slice of lime and a nice sandwich or a piece of funchi. The freshness of the lime also benefits the taste of the soup.
