Sopi di karkó – conch soup

One of the most traditional dishes in the Antilles is the 'sòpi di karkó' – or conch soup. The snail lives in a beautiful large shell. The conch flesh must be beaten several times with a meat mallet to make it tender. Then a delicious soup is cooked.

In Europe you can basically not buy the meat of the karkó. Because the snail is protected in some places in the world, it cannot actually be sold as meat. Yet you can sometimes find it in the freezer at toko's or on the market. Usually you have to ask for it. Because it is such a traditional recipe that is still widely eaten and sold in the Antilles, we decided to include the recipe for this soup in our second cookbook 'Nos Kushina Moderno'.
