Siboyo temperá – Pickled, sweet and sour onions

Siboyo tempera are delicious marinated (raw) red onions. By marinating in the vinegar, the onions get rid of their nasty aftertaste. So you will not 'taste them all day long', as with onions that are still really raw.

You can adjust this marinade to your liking. Add more sugar for a sweeter taste, more vinegar for sour… or more Madame Jeanette pepper for extra spicy.



The siboyo tempera is great as a side dish with fried fish or chicken. Actually, they can be served with almost any meal.

Ingredients:

  • 3 red onions, sliced
  • 2 cloves of garlic, chopped
  • hot water
  • vinegar to taste
  • 1 Madame Jeanette pepper
  • 3 tablespoons of sugar
  • 2 tablespoons of salt

Mix the sugar, salt, hot water and vinegar in a bowl until the sugar and salt are dissolved.

Then cut the Madame Jeanette pepper into large pieces and add it.

Then pour the marinade over the onions and let it stand for at least 3 hours.



Then drain the onions and remove the Madame Jeanette pepper.

Finally, serve the onions with dinner – they are especially delicious with fish!

Tip: For a less hot marinade, you can cut the hot pepper in two pieces. If you want the dish to be spicier, cut it into smaller pieces.
