PREPARATION OF SALTED CARAMEL BROWNIES:
First make the brownies and then the salted caramel. Proceed as follows:
Preheat the oven to 175 degrees and grease a square baking pan (22-24cm) with butter.
If you like, you can line the baking tin with parchment paper. This will make the brownies easier to get out of the shape.
Mix the flour, cocoa, baking powder and salt in a bowl.
Take another bowl and place it over a pan of boiling water ('au bain Marie'). Add the butter and dark chocolates and stir until both have melted.
Mix the sugar into the chocolate mixture. Then also mix in the eggs.
Now add the flour to the mixture and stir briefly until a homogeneous batter is formed.
Add the chocolate chips to the batter and pour into the baking tin.
Bake the brownies for 45-50 minutes, or until one satéskewer comes out of the cake clean.
Remove the brownies from the baking tin and let them cool.
Make salted caramel
Heat the sugar with the water in a small pan.
Cook this until the sugar changes color. You should NOT stir the pan during this process!
When all the sugar has turned brown, you can add the butter in one go. Stir the butter well into the mixture.
Now add the cream (the mixture is going to splash, beware!) And also stir this into the sugar.
When you have obtained a homogeneous mixture, you can remove the pan from the heat.
Finally add the salt and vanilla essence and let the sauce cool to room temperature.
Pour the salted caramel over the brownies. Then cut squares of about 4x4cm.
Decorate the salted caramel brownies with some sea salt flakes.
