Antillean potato salad / salada di batata

salad salad batata is the traditional Antillean version of a potato salad. It is nicely filled with various vegetables, egg and ham. Who dares, add a little more sambal from Madame Jeanette pepper ready!

This deliciously simple salad is especially delicious on hot days. It also works well as an addition to a party buffet or barbecue.



This recipe is for 4-6 people.

Ingredients:

  • 1 kg of potatoes, peeled
  • 1 red onion, chopped
  • 2 sprigs of celery, chopped
  • 1 green pepper, cubed
  • 1 red pepper, diced
  • 5 tablespoons of mayonnaise
  • 1 carrot, grated
  • 100 gr cubes of ham
  • 6 pickles, chopped
  • 4 hard-boiled eggs, sliced
  • a few leaves of (butter) lettuce
  • 1 tomato, sliced
  • salt and pepper to taste

Preparation Antillean potato salad:

Boil the potatoes in salted water until done.

Then drain the water and mash the potatoes.

Then let the potatoes cool.



Now mix all ingredients, except the eggs, lettuce and tomato.

Do you want to add a little pika to the recipe? Then now is the time to do that!

Then put the lettuce leaves on a plate and pour the salad on it.

Finally, decorate the salad with slices of hard-boiled egg and tomato.
