Creamy cauliflower casserole

This creamy cauliflower casserole is so delicious… it could almost pass for a low-carb lasagna! The soft tomato/cheese sauce makes this vegetable a real party.

In recent years we see cauliflower more and more as an alternative to all kinds of other things. You have cauliflower rice, cauliflower pizzas and I have even seen cauliflower brownies. Now I quite like that 'rice', but the other things are a bit too much for me.



So I prefer to eat cauliflower 'normal', as a vegetable. That doesn't mean it has to be cooked all the time. It is also a favorite baked, fried or from the oven.

With this recipe you can make a delicious oven dish for 4 people. Even if people aren't crazy about cauliflower, I bet they like it so much!

INGREDIENTS:

  • 1 cauliflower, in florets
  • 2 tbsp wheat flour
  • 50 gr butter
  • 200 ml milk
  • 140 gr (2 cans) tomato paste
  • 200 gr grated cheese
  • 1 / 2 tsp paprika
  • salt and pepper to taste
  • extra grated cheese, for sprinkling

PREPARATION CREAMY CAULIFLOWER OVEN DISH:

Start by loosening the cauliflower florets. These may be about 4 to 5 cm.

Boil the florets in lightly salted water for 5 minutes. Then drain them and let them drain well.



Meanwhile, make the sauce: heat a pan and stir the flour together with the butter until it starts to simmer gently.

Then add the milk in one go and stir well with a whisk until all the lumps have disappeared.

Now also add the tomato paste, paprika and cheese and stir until it boils again.

You now get a thick, smooth sauce. Finally add salt and pepper to taste.



When the sauce has thickened, you can remove the pan from the heat.

Now mix the sauce into the cauliflower florets. Then pour the mixture into a greased baking dish.

Sprinkle extra grated cheese on top.

Preheat the oven to 200 degrees and bake the casserole for 25-30 minutes, until the cauliflower is cooked and the cheese has a golden brown crust.
