Ponche crema biscuits

Ponche crema biscuits are a great treat for anyone who loves this Caribbean drink. The tasty ponche crema is incorporated in both the batter and the frosting.

You can of course make the cookies with ponche Caribe / ponche Kuba from the store, or with us recipe for homemade ponche crema!



INGREDIENTS:

  • 300 gr flour
  • 2 teaspoons of baking powder
  • a pinch of salt
  • 1/2 teaspoon of nutmeg
  • 1 teaspoon of cinnamon
  • 100 gr butter
  • 100 gr sugar
  • 2 egg yolks
  • 100 g brown sugar
  • 1 cap of vanilla essence / vanilla sugar bag
  • 1/2 cap of rum essence
  • 100 ml ponche cream

FOR THE FROSTING:

  • 100 gr butter
  • 3 to 4 tablespoons of ponche crema
  • 1/2 cap of rum essence
  • 400 gr icing sugar

Preparation of ponche crema biscuits:

Preheat the oven to 175 degrees.

Now mix the flour, baking powder, salt, nutmeg and cinnamon in a large bowl.

Make sure the butter is at room temperature. Beat it together with the sugar and brown sugar until fluffy.

Then mix in the egg yolks and stir well.



Now mix the vanilla essence, the rum essence and the ponche crema into the batter.

Finally add the flour mixture and mix until homogeneous.

Spoon a tablespoon of batter onto a baking tray (lined with parchment paper).

Bake the cookies for 11 – 13 minutes until light brown and done, then let them cool.



For the ponche crema frosting:

To make the frosting, first beat the butter (which is at room temperature) until fluffy.

Then add the powdered sugar, the rum essence and 3 tablespoons of the ponche crema and beat until well mixed.

Is the mixture too thick? Then add some of the remaining 2 tablespoons of ponche crema to get the right consistency.

Finally, coat each cookie with a little of the frosting and sprinkle with cinnamon.
