Pistachio bars with cream cheese frosting

In the Antilles we love pastries with pistachio in it. These pistachio bars have a layer of 'cream cheese frosting' (cream cheese) and that makes them so delicious.

I hadn't heard of the combination before, but after trying it I was sold. The bars & the frosting are just made for each other. So heavenly!



These bars taste (of course) a bit like the traditional 'bolo di pistachio', but are nice and compact and soft due to their composition. Well worth a try!

This recipe is for a bowl of 24-26 centimeters… it's up to you how many bars you make ;)

INGREDIENTS:

  • 300 gr wheat flour
  • 50 gr pistachio paste
  • 125 gr sugar
  • 1 tsp (8 gr) baking powder
  • 1 egg
  • 125 gr butter, melted
  • 60 ml sunflower oil
  • 100 ml milk
  • 1 sachet (8 gr) vanilla sugar
  • 100 gr pistachios, chopped
  • a pinch of salt

For the frosting:

  • 120 gr cream cheese (Monchou)
  • 50 gr butter, at room temperature
  • 1 sachet (8 gr) vanilla sugar
  • 375 gr icing sugar

Take a large bowl and mix in the flour, the pistachio paste, the sugar and the baking powder. Then also add a pinch of salt.

In another bowl you can mix the egg with the melted butter, the oil, the milk and the vanilla sugar.



Then mix the contents of both bowls together until it forms a smooth (but thick) mixture.

Finally add the chopped pistachios, but leave about 1/3 left for decoration.

Then preheat the oven to 175 degrees and grease a rectangular baking pan (about 24-26 cm) with butter.

Now pour the dough into the baking tin and bake the pistachio bars in about 20 minutes.



They should turn a little (!) Brown.

Allow the bars to cool in the baking tray or on a wire rack and then make the frosting:

Take a large bowl and mix the cream cheese with the butter and the vanilla sugar.

Add the icing sugar little by little and beat until it is firm, creamy.

Keep beating until the frosting has almost doubled in volume.

Then pour the frosting over the cooled pistachio cake and cut into strips.



Finally, decorate the bars with extra chopped pistachios. Enjoy your meal!
