Cake with passion fruit curd

This velvety soft cake with passion fruit curd is a feast for the eyes… and for the taste experience! The tart curd is made in no time, but makes this simple cake a real treat.

In the Antilles we love passion fruit, or as we call them: parchita. They are therefore slightly easier to obtain there than in the Netherlands. But nowadays it doesn't have to be a problem here either… especially for this recipe (in which we make a curd from the fruits) you can get along well with the boxes frozen passion fruit cubes from Albert Heijn. We absolutely love them at home & often eat them straight from the freezer. Like a healthy little ice cream or ice cream cone.



The best thing about this recipe? The cake contains no butter and only a little bit of sunflower oil. It becomes nice and creamy with a good amount of coconut milk. Not even that unhealthy.

You can of course bake the cake in a cake tin, but we prefer to bake it in a brownie tin or square baking tin. That way the cake stays a bit lower, but it has more surface area… to put on that delicious passion fruit curd of course!

This recipe is for a baking pan of about 20×30 centimeters, or for a large cake.

Ingredients

For the cake:

  • 300 gr wheat flour
  • 3 eggs
  • 200 gr granulated sugar
  • 50 ml sunflower oil
  • 200 ml (1/2 can) of coconut milk
  • 1 bag / 16 gr baking powder
  • the grated zest of 1/2 lemon
  • a pinch of salt
  • optional: a few drops of coconut essence

For the passion fruit curd:

  • 100 gr passion fruit pulp
    (about 6 cubes of the AH's frozen passion fruit)
  • the juice of 1/2 lemon
  • 100 gr granulated sugar
  • 80 gr butter
  • 4 egg yolks

Cake preparation

Preheat the oven to 170 degrees.



Then start making the cake. You do this by beating the eggs and mixing them with the sugar and coconut milk. Also add the sunflower oil to this mixture and stir well.

Then sift the flour into a large bowl and sprinkle the baking powder and salt through it.

Mix the contents of both bowls together until you get a smooth but thick batter. Then add the lemon zest. Now also add the coconut essence.

Grease a rectangular baking tin or cake tin with butter and pour the batter into it.



Are you using a rectangular baking pan? Bake the cake for about 35-40 minutes. Do you use a cake tin? In that case, the baking time will be slightly longer, about 50 minutes or until a satéskewer comes out of the cake clean.

Then let the cake cool to room temperature. Preferably 10 minutes in the baking tin, then on a grid.

Preparation of passion fruit curd

Meanwhile, continue making the passion fruit curd. Take a pan and put it on medium heat. Put a layer of water in the pan.

Then place a bowl on the pan, but make sure that the bottom of the bowl just doesn't touch the water. ("Au Bain Marie").

Put the passion fruit pulp (or cubes) together with the butter, sugar and lemon juice in the bowl and stir until the butter has melted.

Beat the egg yolks in a small bowl and mix it with your passion fruit mixture. It is important that you continue to beat very well with a whisk.



At some point, the temperature of the curd will rise above 80 degrees and the egg yolks will start to solidify. Keep beating well now!

When the curd has thickened, remove the bowl from the heat and let the mixture cool. Note: it is important that the curd gets hot, but DOES NOT cook… otherwise you will have passion fruit with scrambled eggs ;)

When both the cake and the passion fruit curd are at room temperature, you can pour the curd over the cake.

Cool the cake further by placing it in the fridge for an hour. Cut the cake into slices or squares and… enjoy your meal!
