Pan di kokolishi – rolled white bread rolls

Pan di kokolishi are small rolled white bread rolls. They are very popular in the Antilles for breakfast, lunch and even dinner. At every 'Truk'i Pan' (our version of a mobile food truck!) you can buy these sandwiches, filled with the tastiest things: Braised (threads) meat, slices of sausage, eggs – but let's be honest… with a slice of cheese they can't be resisted either!

You don't have to have any special skills to make these sandwiches. It is important that you roll the pan di kokolishi well, tightly and rub it with egg. This gives them their characteristic shape.



With this recipe you make about 10 pan di kokolishi.

INGREDIENTS:

  • 500 gr flour
  • 1 bag / 8 grams of yeast (instant) OR 25 grams of fresh yeast (cube)
  • 2 tablespoons of sugar
  • 80 gr butter or margarine
  • 250 ml (cold) water
  • 1 / 2 teaspoon of salt
  • 1 egg, jammed

PREPARATION PAN DI KOKOLISHI:

Put the flour, the yeast, the sugar and the salt in a bowl and stir these ingredients well together. Then make a hole in the middle. Melt the butter or margarine and put it in the well just made. Don't mix yet!

Then add half of the water and start kneading the mixture. Add the rest of the water little by little, until a firm (but not sticky) dough forms.

Knead the dough for about 10 minutes. Optionally, a little more flour or water can be added to get the right firmness.



Then roll out the dough on a floured work surface and cover it with a piece of plastic wrap. Let it rest for half an hour. Then divide the dough into 10 pieces.

Now make a ball of each piece and cover it again with plastic foil. Roll out the balls with your hands to a hose of at least 30 cm. Roll up the hose (tightly!) Like a spiral.

Then place them on a (floured) baking tray and cover them again with plastic wrap. Let the pan di kokolishi rise for 1 hour. Make sure that there is enough space between the rolls, because they get even bigger during proofing!



Preheat the oven to 200 degrees. Prick the balls with a fork and brush them with beaten egg. Finally, fry the pan di kokolishi for about 20 minutes until golden brown and done.
