Oven dish with pineapple and sauerkraut

Pineapple is an ingredient that we love to eat here at home. And I mean really like. As fruit, in desserts, on cake, but just as good with dinner. And yes – don't say it further – we even have pineapple on the pizza at our house! So this casserole is really a favorite. When we make it, the bowl will be empty in no time.

You make the casserole with minced meat, sauerkraut and pineapple. In addition, leeks, cheese and mashed potatoes are also included. So you hear it already: a complete meal in an oven dish!

The products of Le Creuset

Speaking of which… the baking dish, just like the plates and the pepper mill in the photo, was a gift from Le Creuset. You may know them from the beautifully colored casserole dishes, crockery and cooking utensils that are produced in France.

These products have been made in the same traditional way since 1925. A base of extremely strong cast iron with a beautiful, hard layer of shiny enamel. By the way, that cast iron is poured into a mold made of sand. And after casting, the mold is broken down again. This is why each pan is slightly different from the next. Completely unique.

What's so cool: also the roasting pan that we were allowed to use for this recipe is made of cast iron. Just like the pans!

By now you already know how crazy I am about cooking in cast iron and this roasting pan is really a product after my heart. It conducts heat well and keeps your dish warm even after cooking. When we put this casserole on the table, it is still hot even when it is served the second time. This is because the cast iron can retain the heat for so long.

By the way, did you know that Le Creuset's pans and 'cookware' come with a lifetime warranty? Of course you can only promise something like this if the quality is really good!

Tropical colors

Almost all Le Creuset products come in super bright colors that will make you happy. My favorite color is (how could it be otherwise?) their 'Caribbean Blue'. They have pans, teapots and crockery. And for the people who come from the Antilles it is of course clear: that blue is really the blue of our Caribbean Sea!

A big 'thank you!' so to Le Creuset for these tropically colored products that we are allowed to work with. They will also give an extra cheerful touch to our new cookbook.

The recipe for the casserole

This recipe for the sauerkraut and pineapple casserole is made for about 6 people. But if you eat it as the (only) main course, you might as well eat it with 4.

Vegan option: replace the minced meat with vegetarian minced meat and the cheese with vegan cheese and you're good to go!

Ingredients:

  • 500 gr mashed potatoes (homemade or instant)
  • 100 ml crème frache
  • 1 pack (500 gr) sauerkraut
  • 200 gr grated cheese, matured
  • 2 cans (2x 300 gr) pineapple rings
  • 1 large leek, in strips
  • 500 gr (beef) minced meat
  • 2 tbsp olive oil, for frying
  • 1 tbsp masala or curry powder
  • Pepper and salt to taste

Preparation casserole with sauerkraut and pineapple

Make the mashed potatoes by mashing boiled potatoes, or by preparing a packet of instant mashed potatoes. Mix the crème frache with the puree. Then let the sauerkraut drain (you can really squeeze it well!) and mix this with the mashed potatoes as well.

Now preheat the oven to 180 degrees and grease an oven dish or roasting tray with butter.

Then heat the olive oil in a frying pan and fry the minced meat in it. Add the masala and the leek rings and fry until the leek is limp. Season the meat further with salt and pepper.

Now it's time to assemble the casserole. First place the mincemeat-leek mixture on the bottom of the baking dish. Drain the pineapple rings (from one can) and divide them over the minced meat.

Now put the mashed potatoes with sauerkraut in the dish and spread it evenly over the pineapple rings. Also drain the pineapple rings from the second can and place them on top of the mashed potatoes. Finish the casserole by sprinkling the grated cheese over the pineapple rings.

Bake the casserole for about 30-40 minutes until golden and cooked through. Let it cool for about 10 minutes after baking before dividing it into pieces. Enjoy your meal!
