Mini turbans with cream cheese frosting

You can bake these cute turbans with a basic cupcake batter. After baking, they are decorated with soft cream cheese frosting and various chocolate sprinkles.

Are you also crazy about one person pastries? I always think it's just that little bit more than a slice of cake or slice of cake. You can see that effort has been made to prepare each portion separately and that is nice for the recipient.

These turbans are a perfect example of that. Even if you bake them 12 at a time, you can still decorate them one at a time with frosting and sprinkles. By the way, you have to be a little careful with those sprinkles: because there is still quite a bit of moisture in cream cheese frosting (unlike, for example, buttercream), it is better not to sprinkle sugar sprinkles on it. You run the risk that the sprinkles 'run out' and that the result will be less attractive. You are always in the right place with chocolate sprinkles!

The mini turban shape

For this recipe I use the mini turban shape from the Wilton brand. It is very sturdy and has a nice non-stick coating. The cakes release well. This baking pan is 41×28 centimeters in size and fits exactly on the baking tray of our (normal) oven. Pay attention:  It is best to measure your oven first to see if this shape also suits you!

I mixed the chocolate sprinkles for these turbans myself for the occasion. It is a combination of chocolate rocks, crispy chocolate pearls and crispy hazelnut pieces (nougatine).

The recipe

For this recipe you need a baking pan for mini turbans and some tasty sprinkles. Another ingredient that is nice, but not necessary, is white food coloring. With this I color the cream cheese frosting extra white. Because some butter goes in, the frosting itself is a little bit yellow. No problem, of course, but if the turbans really need to be 'picture perfect', you can -just like me- mix in some white food coloring.

This recipe is for 12-15 turbans

Ingredients:

For the turbans

  • 180 gr unsalted butter
  • 135 g sugar
  • 8 grams (1 bag) vanilla sugar
  • 4 eggs
  • 180 grams self-raising flour
  • A pinch of salt

For the frosting

  • 100 gr cream cheese
  • 50 gr butter
  • 200 gr icing sugar
  • A drop of white food coloring (optional)

And further…

  • chocolate rocks
  • nougatine
  • Crispy chocolate pearls

Preparation mini turbans with cream cheese frosting

Mix the butter, sugar and vanilla sugar in a bowl until creamy. Then add the eggs one at a time and keep mixing until well incorporated.

Now add the salt and self-raising flour little by little. Mix everything until these dry ingredients are also included in the batter and you get a smooth and homogeneous whole.

Grease the mini turban mold with butter (this is easiest with a brush!) and preheat the oven to 170 degrees. Divide the batter among the moulds. Note: never fill the molds more than 2/3 with batter.

Bake the mini turbans for about 20 minutes until done and golden brown. Do they have a top that isn't completely flat? No problem: with a serrated knife you cut off the excess, so that the turbans will remain straight.

Let the turbans cool on a wire rack and continue making the frosting.

To do this, mix the butter with the powdered sugar until creamy. Then add the cream cheese and optionally the white food coloring and beat until light and fluffy.

When the turbans have cooled, you can add some of the frosting. I did this with a piping bag from which I cut a small piece, so without a nozzle. This way you can spray a ring of the frosting on the turbans. Then you can spread the frosting with a brush, so that it looks like it 'runs off' a bit from the sides.

Finally, decorate the mini turbans with a mix of the sprinkles. - Enjoy your meal!
