Mini cheese quiches

We made these tasty snacks for our youngest children's Christmas party (at school). The cheese quiches are a perfect snack during a party, drinks… or just because!

You make these little cakes very simply; the dough is an English “hot water crust”. That means you make it with boiling water. So be careful when kneading!



We have slightly modified the original recipe for the hot water crust. Normally, no butter, but lard is used in the dough. So if you want it completely authentic, you should use that, but… with butter they also taste really good!

For the filling, use your favorite cheese. We used a nice mature 48+ cheese, which has extra flavour. Another option is to make them with goat cheese. Just what you like best, of course.

Make about 36 quiches from this recipe.

Tip: You can add anything to these little quiches to give them even more flavor. How about cubes of ham or bacon, pieces of bell pepper or a spoonful of sambal?

Ingredients

For the dough:

  • 500 gr wheat flour
  • 1 tsp salt
  • 120 gr butter
  • 275 ml water

For the filling:

  • 6 eggs
  • 100 ml of whole milk
  • 300 gr grated cheese
  • pinch of salt and pepper
  • 1 / 2 tsp paprika
  • 1 tsp mustard

Preparation of cheese quiches

Start making the dough. For this you take a pan in which you bring the butter to the boil along with the water. Meanwhile, put the flour together with the salt in a large bowl.

When the water boils, pour it on the flour. Then stir well with a wooden spoon, until you get a cohesive dough. Knead the dough gently for a moment. Note: it is hot! If it really doesn't work, you can also let the dough cool down.



Then let the dough rest for 15 minutes while making the filling:

Break the eggs into a large bowl and beat them. Mix in the milk, the grated cheese, salt and pepper, paprika and the mustard. Stir well.

Now grease a cupcake baking tin with butter. Then dust your worktop with flour and roll out the dough into a cloth about 5 mm thick. Cut out rounds with a cookie cutter or glass. Push these circles into the cupcake cases so that you get small containers.

Preheat the oven to 175 degrees.

Spoon a tablespoon of the filling into each 'bowl'. Make sure there is enough cheese in the tablespoon (the cheese tends to sink).

When all quiches are filled, bake them in the oven for about 30 minutes until golden and golden. Let them cool in the pan for a minute and then take them out. Let them cool completely on a wire rack. Enjoy your meal!



You can keep the quiches in the refrigerator for about 3 days or at room temperature for 1 day. Of course you can also freeze!
