Mango salad is pretty much the perfect side dish. Fresh, light and wonderfully sweet… this mango salad has it all! Sometimes it's just a good idea to have the whole rainbow on your plate.

This salad is a perfect example of that. It gives color to your meal and gives that extra Caribbean touch to the food. Both the salad and the dressing are completely fat-free. However, that does not detract from the tasty, fresh taste of this dish.


  • the juice of 1 lime
  • 1 tbsp honey
  • ½ red cabbage
  • 1 hearty mango
  • 1 red peppers
  • 6 onions
  • a small bunch of cilantro
  • salt and pepper to taste

Preparation of the mango salad

First, remove the heart of the red cabbage and cut the cabbage into very thin strips. Then also cut the red pepper into strips.

Then remove the skin and stone from the mango and cut the flesh into pieces. Cut the spring onions into fine rings.

Now pick the leaves from the coriander and chop finely. Then combine all the vegetables and the mango in a large bowl.

Finally, mix the lime juice with the honey and add salt and pepper to taste. Pour this dressing over the salad and mix everything well. - Enjoy your meal!
