low carb Johnny Cakes – low carb version!

It's pretty much question #1 we receive these days: can Antillean snacks (pastechi, Johnny Cakes, etc.) not be made low carb / low carb once?

It took a while, but we finally managed to create a sandwich that is low in carbohydrates, can be fried and does not consist of 90% air. 



An airy bun with a nice structure

In the photo below you can see the structure of our low carb Johnny Cake see. Nice and airy, but with a firm bite. Bonus: This Johnny Cakes have an extra crispy crust!

Replacement ingredients

Anyone who follows a low-carbohydrate diet knows that baking is difficult! Everyday ingredients such as flour and sugar are of course out of the question in this lifestyle. And yet every now and then you feel like a sandwich… or at least something that resembles it. A Johnny Cake would of course be delicious. But how on earth do you make sure it fits into the diet?

“Ordinary” Johnny Cakes consist of little more than flour and sugar. We have experimented endlessly with all kinds of replacements. Usually the sandwiches either became very heavy (type of brick!) Or so airy that you actually had nothing to eat.



In the end, we managed to make a mix with fairly easy-to-obtain ingredients that yield a nice, airy bun that is enough for a small meal. Finally!

The recipe is for about 6 low carb Johnny Cakes. Per Johnny Cake you get about 7 grams of carbohydrates. When you top the sandwich with a slice of cheese or, for example, bakkeljauw, it also stays with that 7 grams. Not bad, right?

INGREDIENTS:

  • 125 gr wheat gluten
  • 50 gr soy flour
  • 50 gr almond flour
  • 30 g chickpea flour
  • a few drops of sweetener (optional)
  • 1 / 2 tsp salt
  • 1/2 sachet (8 gr) baking powder or tartar baking powder
  • oil, for frying

PREPARATION LOW CARB JOHNNY CAKES:

Start making the dough: To do this, mix the wheat gluten with the soy flour, almond flour and chickpea flour.

Then add the salt, baking powder and sweetener. Stir these “dry” ingredients well until they are well mixed.



Add about 200ml of water to the mixture and knead into a firm dough. Is the dough too sticky? Then add some extra wheat gluten. Is the dough too dry? Then add some water. Knead the dough into a nice, smooth ball and divide it into 6 pieces.

Then roll out each ball into a circle about 5mm thick. Because you are not allowed to dust the worktop with flour, this is easiest between 2 sheets of baking paper!

Heat the oil in a small pan. The layer of oil must be at least 4cm high. Depending on the size of your pan, you will see how much oil is needed to make the Johnny Cakes to make. (a deep fryer is also fine, of course!)

Bake the low carb Johnny Cakes several minutes, until they swell slightly and turn golden brown. Let the Johnny Cakes then drain on kitchen paper, where they also have time to cool down.

Cut the low carb Johnny Cakes in half and fill them with eg cheese, cod or something else tasty.
