Li di coco – Antillean coconut ice cream

Li di coco are traditional Antillean ice creams. They are made from milk, sugar and grated fresh coconut. You just taste the Caribbean in it!

Because this last ingredient takes a lot of work, is not always easy to find and is not loved by everyone, our version uses coconut milk. This way you do get the delicious coconut flavor, but no pieces of coconut between the teeth.



Ingredients:

  • 400 ml coconut milk
  • 400 ml sweetened condensed milk
  • a cap of vanilla essence

Preparation of li di coco:

Put all ingredients in a bowl and mix well with a whisk.

Divide the whole among a number of plastic cups and seal it with aluminum foil.

Traditionally, people do not put ice cream sticks in the Antilles, but we personally find it very useful to put them in the ice creams;)

Insert an ice cream stick in the center of the cup through the aluminum foil.



The foil ensures that the stick remains straight.

Leave the cups in the freezer for 12 hours.

Tip: To make it easier to remove the ice cream from the cups, you can hold them under the warm tap for a few seconds.
