Brazilian chicken croquettes

These Brazilian chicken croquettes are really irresistibly delicious! They are traditionally called 'Coxhinas' and are made in the shape of a drop.

The conxhina has an exterior of potato and wheat dough and is filled with a mixture of chicken and cream cheese. You make about 20 pieces of this recipe.



To vary, you can also make the filling with cod or minced meat. If you use cod, do not add cream cheese, but make a sauce based on tomato paste.

Ingredients:

For the filling

  • 750 gr chicken (thigh fillet)
  • 3 cloves garlic
  • 2 onions, chopped
  • 1 / 2 tsp salt
  • 1/2 tsp black pepper
  • a bunch of parsley, chopped
  • 1/2 tsp curry powder
  • 100 gr cream cheese
  • 3 tbsp olive oil

For the dough

  • 1 large potato
  • 400 ml chicken
  • 1 (chicken) stock cube
  • 50 gr butter
  • 300 gr wheat flour
  • bread-crumbs
  • a bowl of water (for the hands)
  • sunflower oil (for frying)

Tips:

Note: the 400 ml chicken stock is what you are left with after cooking the chicken. So you don't have to add it again!

The amount of water is not important, because it is not included in the recipe.

You need about a liter of oil for frying.



Preparation of chicken croquettes:

  1. Boil the chicken together with the potato in 1 liter of water with the stock cube.
  2. When both are cooked, remove them from the stock.
  3. Do not throw away the stock afterwards! You will need 400 ml for later in the recipe.
  4. Mash the potato and mix in the 50 gr butter.
  5. Then fluff the chicken pieces or chop finely in a food processor.
  6. Make sure you have 400 ml stock and then add the mashed potato.
  7. Put this on the fire again and add the flour little by little.
  8. Meanwhile keep stirring well, until you get a dough.
  9. Then knead the dough while it is still warm.
  10. Now make the filling: fry the onions and garlic in a little oil until they look translucent.
  11. Add the chicken, salt, pepper and curry powder and stir well.
  12. Finally add the parsley and cream cheese. Stir until the cream cheese has melted and you get a homogeneous mixture.

Compose chicken croquettes:

  1. Always take a ball of dough the size of a ping pong ball.
  2. Then flatten the ball and then press a hole in the middle.
  3. Now put a tablespoon of the filling in the middle of the dough and fold the dough around it.
  4. Then roll the croquettes around, or make them (traditionally!) In the form of a drop.
  5. To bread the croquettes, just wet your hands with water and hold one of the croquettes.
  6. Then let him go around in a bowl of breadcrumbs.
  7. Then heat the sunflower oil to 170 degrees.
  8. Finally fry the croquettes until they are golden.
  9. Let them drain on kitchen paper, so that the excess fat is absorbed.

It is best to keep the chicken croquettes warm in the oven after baking. Do you want to make them in advance? Then freeze them RAW and bake them when you want to serve them.
