Keshi yená – Antillean cheese casserole

Keshi Yená is an authentic dish that is only eaten in the Antilles. It dates back to colonial times and is a real slave dish. It was originally made in a hollowed-out Edam cheese. The round cheese was eaten by the 'master' and the (thick) rind was given to the slaves.

They used their imagination and turned the leftover cheese into a festive dish. Actually, the crust was filled with whatever was on hand: pieces of meat, vegetables, herbs. Then a sauce was poured over it. This allowed the cheese to be eaten instead of meat.



Today, little can be found of the 'poor' origin of the dish. It is just a treat when you are presented with this dish. It is therefore one of the most chosen dishes in the traditional restaurants on Aruba, Bonaire en Curaçao.

Traditional side dishes for the keshi yená are rice or funchi… and of course a few slices of fried banana! Do you want to complete your meal? Then eat a fresh (raw) salad with it!

Ingredients

Nowadays, slices of matured cheese are often used instead of the crust of an Edam cheese. And the dish has become more luxurious and festive over the years due to the large amount of meat.

The filling that we use in our recipe is somewhat similar to the filling of our ayaka. You will find peppers, raisins and capers in it, for example.



The keshi yená is really a dish that you can adjust to your own taste. Cheese goes well with many ingredients, so if you want you can vary the filling.
