Irish potato farls / potato bread

Have leftover boiled potatoes? Then this is the perfect way to make it up! Irish 'potato farls' (or potato bread) is such a nice recipe that you can use in all directions. 

The Irish eat the farls for breakfast. With a fried egg, different types of sausage and even some white beans. For me, such an extensive breakfast is a bit too much, which is why I like to make them for dinner.



In the original recipe, only a little salt goes as a seasoning. I like to add garlic, rosemary and pepper to this. But above all, feel free to experiment with herbs. You can make a variation of roti with some curry / mass powder. And with Mexican spices a variation on tortilla.

The word 'farl' comes from the Gaelic 'fardel', which means 'four parts'. I don't have to explain it of course, just look at the shape of this delicious potato bread! With this recipe you make 2 plates, or 8 'farls'.

INGREDIENTS:

  • 500 gr potatoes
  • 100 gr wheat flour
  • 1 / 2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp finely chopped rosemary needles
  • 2 cloves garlic, minced
  • 50 gr butter
  • extra flower, to pollinate

PREPARATION POTATO FARLS:

Cook the potatoes in slightly salted water until done. Then drain the water and mash the potatoes. This is of course also fine with a leftover potato from the previous day.



Chop the garlic and rosemary and add them to the mashed potatoes along with the butter, salt and pepper. Then add the wheat flour and knead it into a dough.

potato farls irish potato bread recipe boxty irish recipeTake a ball of the dough about the size of a tennis ball. Dust your work surface well with flour and roll out the ball to the size of your frying pan. The farls are best when there is still a layer of flour sticking to the rolled out plate.

Cook the plate in a heated, dry skillet over medium heat until cooked and golden brown. Then cut it into four pieces and serve the potato farls with whatever you like best.

Tips: top them with cheese, or serve them alongside a tasty one stobá!
