Honeycomb is a delicious kind of candy that is surprisingly easy to make yourself. It only has 4 ingredients and is almost impossible to fail. Want to quickly put something delicious on the table with your coffee? The honeycomb is made and cooled within half an hour! That's what I call useful...
We call it 'candy' in this recipe for convenience, but it is actually a bit between candy and cake. You make it from sugar and there is no flour in it, but after preparing it it still becomes super brittle and airy. So really unique!
An easy recipe
Making most (Antillean) candies requires precision and practice. You often have to heat the sugar to exactly the right temperature and that is not always easy. Fortunately, the honeycomb is different: you can start from the color and texture of the sugar:
Is the sugar amber in color and you no longer see crystals? Then it is good! Would you rather work exactly? Then you can measure the temperature with a sugar thermometer. The honeycomb is ready when the sugar reaches a temperature of 148 degrees Celsius.
With this recipe you make a piece of honeycomb of about 30×30 centimeters. The choice is yours into how many pieces you break it into afterwards!
- 200 gr granulated sugar
- 50 ml of honey
- 2 el water
- 10 g baking soda
Preparation honeycomb sweets
Line a baking tray with parchment paper. Here you will deposit the mixture of the honeycomb when it is ready.
Take a large pan (preferably with a thick bottom) and heat the sugar, honey and water in it. Stir the mixture briefly, until all the sugar is moist and it looks like wet sand. After that it is important not to stir the mixture again!
Heat the mixture over medium heat, until the sugar begins to caramelize. It now turns amber-brown. If you have a thermometer, you can measure the temperature of the mixture. The caramel is intended to reach 148 degrees Celsius.
Now add the baking soda to the pan and stir the mixture vigorously very quickly. Watch out – the caramel is extremely hot!
When you add the soda, the mixture will increase in volume enormously because of the air bubbles that the soda creates. it will be about 5x as much as before. This is why I talked about a 'big pan' in the beginning ;)
Now quickly pour the hot sugar syrup onto the baking tray lined with baking paper. The mixture will spread and form a large 'cake'.
Let the honeycomb cool for about XNUMX minutes, until it has become hard and brittle. After that, you can break or cut it into pieces. Enjoy your meal!
