The best cornbread

It is clear that Antilleans like to use corn meal. We eat it daily with soup and stews. Usually it is then cooked. Or first cooked and then baked.

However, there is another way to enjoy cornmeal, and that is in the form of cornbread. This is an invention from the United States, but it is also popular in South America.



When baking cornbread, you quickly run the risk of the end product becoming dry. Certainly when you use steamed corn flour (as we like to use it, from the Harina PAN brand) you sometimes want to dry the batter, the longer it is.

But with this recipe you can make a velvety soft and wonderfully airy cornbread. The secret? We use a good amount of yogurt in it. Incidentally, the result is not sour at all… that's what the soda takes care of.

This recipe makes a cornbread of about 20×25 cm.

Ingredients:

  • 4 eggs
  • 125 gr wheat flour
  • 200 gr (yellow) corn flour
  • 450 ml of full-fat yogurt
  • 225 ml (sunflower) oil
  • 100 gr sugar
  • 1 bag / 16 gr baking powder
  • 1 tsp baking soda
  • 1 tsp salt

Cornbread preparation:

Preheat the oven to 170 degrees.



Take a large bowl and mix the corn flour with the flour, the sugar, the baking powder, the soda and the salt. Then make a well in the center of this mixture.

Beat the eggs and mix them with the yoghurt and the oil. Pour this mixture into the mixing bowl and stir with a spoon to a firm batter. The batter will thicken considerably; a spoon could stand upright in it!

Grease a 20×25 cm baking tin with butter and sprinkle with some flour. Pour the batter into the baking pan.

Bake the cornbread for about 35-40 minutes until done and golden brown. The cornbread is ready when one satéprick comes out clean.



Let the cake cool in the tin for about 10 minutes and then place it on a wire rack or cutting board. When it has cooled to room temperature, you can cut it.

Tip: This recipe is for a mildly sweet cornbread. Fine to eat at dinner or to invest with something tasty. Do you prefer a nice sweet version? Then double the amount of sugar to 200 grams.
