Quesadillas are delicious 'sandwiches' made from tortilla wraps. You fill them with cheese as standard… and then you can vary endlessly with other ingredients. So long as the basics are right!

For this recipe we use tortillas made from flour. You can make these yourself or buy them ready-made. I think the latter is an easy option in this case. Your quesadilla will be ready in no time!



Do you want to make the tortillas yourself? This can be done by mixing 200 grams of wheat flour with 125 ml of water, a pinch of salt and a spoonful of olive oil. You then knead a firm dough. Take a ball of each and roll it out as flat as possible.

Heat a (dry) frying pan over high heat and fry each tortilla for about 2 minutes. One minute on each side, or until nicely colored. With the amounts above you get about 6 tortilla wraps. You can then make a delicious quesadilla yourself. But, as said before: wraps from the store are also great!

The recipe for the quesadillas is for 4 pieces / persons

Ingredients:

  • 4 tortilla wraps
  • 1 avocado, peeled and cubed
  • the juice of 1/2 lime
  • 1 chili pepper, in rings
  • 1 red pepper, diced
  • 1/2 tsp cumin powder
  • 1/2 tsp (smoked) paprika powder
  • 100 g matured cheese, grated
  • 2 tbsp sunflower oil
  • 100 ml sour cream
  • a few sprigs of cilantro
  • salt and pepper to taste

Preparation of quesadillas with cheese and avocado:

Start by making the (cold) tortilla wraps a bit more flexible. You do this by heating them in a dry frying pan for about 30 seconds.



Cut the avocado into small cubes and mash it. Mix in the lime juice and possibly some salt. Now brush half of each tortilla wrap with the avocado mixture.

Then mix the paprika cubes with the chili rings, the cumin and the paprika powder. Also spread this mixture over the avocado and finally sprinkle it with the grated cheese.

Then fold the tortilla wraps in half.

Then heat some oil in the frying pan and fry the folded wraps light brown on both sides. The cheese should have melted in the meantime.



Serve the quesadillas with a spoonful of sour cream and a sprig of coriander. Enjoy your meal!
